Immune Boosting Miso Noodle Soup

1 cup Mushrooms of your preference
1 packet Rice Noodles rinsed and soaked in boiling water
2 Tbsp White Miso Paste
1 cup chopped carrots
1 x onion diced
2 sticks celery chopped
1 Tbsp ginger grated
1 tsp garlic minced
300g chicken or tofu
500ml Stock – veggie or chicken
2 cups of water
½ lemon juiced
½ tsp Turmeric
1 dash soya sauce or pinch salt
½ cup coriander chopped
chili optional
1 Tbsp dried seaweed optional
Fry up onion and ginger for 2-3min. Add garlic carrots, celery and miso paste with a splash of water or stock, stir around. Add either chicken or tofu and stir for 5min, then add remaining ingredients except for noodles and cook for a minimum of 10min leave for longer if you prefer. Add noodles and coriander just before you serve.
